I could live on this avocado feta sandwich. In May of 2015, I discovered this delightful treat in a coffee shop called Cava, up in Millers Point, Sydney, Australia. The young lady made it right in front of me while her friend brewed my coffee. It doesn’t get any fresher than that! I took it outside and found a sunny bistro table to soak up the sun and soak up the flavor.
I have incredibly fond memories of Sydney. Every day was an opportunity for a new food adventure with a market to discover or a little food joint around the corner.
Avocado Feta Sandwich Recipe

||In a 1-quart bowl, mash the avocado, feta, and lime juice together.||Lime juice adds fresh flavor and slows avocado discoloration from oxydation.|
||Spoon avocado mixture loosely on the bread. Plate and then drizzle with olive oil; top with pepper.|
