I could live on this avocado feta sandwich. In May of 2015, I discovered this delightful treat in a coffee shop called Cava, up in Millers Point, Sydney, Australia. The young lady made it right in front of me while her friend brewed my coffee. It doesn’t get any fresher than that! I took it outside and found a sunny bistro table to soak up the sun and soak up the flavor.

I have incredibly fond memories of Sydney. Every day was an opportunity for a new food adventure with a market to discover or a little food joint around the corner.

Cholesterol Buster Tip: Eliminate the feta and top with thinly sliced shallot or red onion.

WHAT YOU NEED WHAT TO DO WHY
  • 1 large (10-12 ounce) ripe avocado
  • 3 ounces feta
  • 1 tablespoon fresh lime juice.
In a 1-quart bowl, mash the avocado, feta, and lime juice together.  Lime juice adds fresh flavor and slows avocado discoloration from oxydation.
  • 4 slices of toasted sourdough
  • 1 tablespoon extra-virgin olive oil
  • Cracked black pepper.
Spoon avocado mixture loosely on the bread. Plate and then drizzle with olive oil; top with pepper.
