Mark and I are always looking for flavorful salads and sides. And when we are going light, we transform them into mains with reverse portioning, which means we add a couple of ounces of protein versus serving a protein as the main event. Mark did not readily embrace this idea of reverse portioning, but I am slowly winning him over. He is a runner, and we both like to hike, and so we have to manage our intake when our belts get too tight. It happens more often than it should, but we like good food! A lot! Great salads and sides make it easier to ratchet down the caloric commitment without giving up anything we love.
