We always need good salads and sides. If they are green, they make us feel a little less guilty about that cheesecake we prepared. When Mark and I are going light, we do what we call reverse portioning. An ounce or two of protein on a fabulous salad can suddenly serve as a very satisfying main. It’s all about being flexible and staying inspired.
