Honey is the food of the gods, but not when it suddenly crystalizes. It is unpleasant to the palate, so you probably think about throwing it out. And yet honey is so expensive, and so you hesitate. What to do?

Please do not throw it out! You can save it, and thankfully it is an incredibly simple solution. Transfer it to a canning jar, loosely cap it, center it in a slow cooker (crockpot), and add tap water halfway up the sides of the jar. Cover the crockpot and simmer on low for about 1 hour.

Why long and low and capped? Because the crystals need to break down slowly and thoroughly to reduce the risk of recrystallization.

Wahoo! Honey made new! Just look at that return to clear amber goodness.
